Of all the comfort food recipes I have made in my kitchen, tasted, and served on my family’s dinner table, the chicken noodle soup is the most versatile and easily adaptable to any occasion or cooking style. I have made chicken noodle soup before using pasta and now I’m excited to try making a vegan chicken noodle soup with soy curls.
Tomato soup is, perhaps, the easiest soup I’ve ever made. Its main ingredient, tomatoes, are also a favorite vegetable of mine. However, not everyone enjoys eating fresh tomatoes mashed or pureed into soup. So, I made Campbell’s Tomato Soup with Almond Milk. It only takes 15 minutes or less to cook is a big plus for me!
One of my favorite soups to share was this simple beef barley soup. In fact, I make this one quite often. My husband is more of a stew lover, so he especially enjoys when it thickens up overnight. You can easily thin it out a bit by adding a small amount of water or broth when reheating if you prefer it to be more “soupey”.
