Description
This soup recipe is light, healthy, and high in vitamins. It’s as easy as boiling water and chopping a few vegetables. This simple vegan soup with sweet potato, carrot, and fiery ginger will quickly become a favorite among vegans and non-vegans alike.
Ingredients
1 tbsp olive oil
¾ large onion chopped
1 pound (454g) sweet potato peeled and cut into chunks
½ pound carrots (226g) chopped
3 inch ginger piece (7.5cm), finely grated
vegetable stock 1.5 litres
salt and pepper
Instructions
STEP 1: Add some oil to a pan and heat it up while you chop the onions, potato and carrots.
STEP 2: Add the chopped vegetables to the oil and let them cook for about 10 minutes.
STEP 3: Add the finely grated ginger and cook for 2 minutes.
STEP 4: After 2 minutes, add the stock and bring to a boil.
STEP 5: Let simmer for 20 minutes until the carrots and potatoes are completely tender.
STEP 6: Remove the soup from the heat and using an immersion blender, blend until smooth
Notes
Notes: If it is too thick, add more stock. Add salt and pepper to taste.
