Instructions
- Preparation: Ensure the ricotta cheese is well-drained to avoid a watery mousse. If necessary, place the ricotta in a fine-mesh sieve over a bowl and let it drain for an hour in the refrigerator.
- In a mixing bowl, whisk the heavy cream until soft peaks form.
- In another bowl, combine the ricotta cheese, honey (or maple syrup), vanilla extract, lemon zest, and a pinch of salt. Mix until smooth.
- Gently fold the whipped cream into the ricotta mixture until well combined.
- Spoon the mousse into individual serving dishes or glasses.
- Chill in the refrigerator for at least 2 hours before serving.
- Before serving, top with fresh berries or fruit compote and garnish with mint leaves if desired.
Notes
- Ensure the ricotta is well-drained to achieve the best texture for the mousse.
- You can adjust the sweetness by adding more or less honey/maple syrup.
- For a citrusy twist, you can add orange zest or replace lemon zest with lime zest.
- The mousse can be made a day in advance and stored in the refrigerator.
