  • 3 tablespoons honey or maple syrup (adjust to taste)
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • A pinch of salt
  • Fresh berries or fruit compote for serving (optional)
  • Mint leaves for garnish (optional)

Instructions

  1. Preparation: Ensure the ricotta cheese is well-drained to avoid a watery mousse. If necessary, place the ricotta in a fine-mesh sieve over a bowl and let it drain for an hour in the refrigerator.
  2. In a mixing bowl, whisk the heavy cream until soft peaks form.
  3. In another bowl, combine the ricotta cheese, honey (or maple syrup), vanilla extract, lemon zest, and a pinch of salt. Mix until smooth.
  4. Gently fold the whipped cream into the ricotta mixture until well combined.
  5. Spoon the mousse into individual serving dishes or glasses.
  6. Chill in the refrigerator for at least 2 hours before serving.
  7. Before serving, top with fresh berries or fruit compote and garnish with mint leaves if desired.

Notes

  • Ensure the ricotta is well-drained to achieve the best texture for the mousse.
  • You can adjust the sweetness by adding more or less honey/maple syrup.
  • For a citrusy twist, you can add orange zest or replace lemon zest with lime zest.
  • The mousse can be made a day in advance and stored in the refrigerator.
