Instructions

- Gradually fold in the erythritol (or your chosen sweetener) and fresh lemon juice, gently mixing until well combined.
- Divide the mousse among individual serving dishes or glasses.
- Refrigerate for at least 1-2 hours, or until set.
- Before serving, garnish with a slice of lemon or a sprinkle of lemon zest, if desired.
Notes
- Ensure the erythritol is powdered to avoid a grainy texture in the mousse.
- Adjust the sweetness according to your preference. The lemon juice’s tartness can vary, so taste and adjust as needed.
- The mousse can be made a day in advance and stored in the refrigerator.
