Description

Smoked Gouda Potato Soup is a creamy and smooth soup that is perfect for a cold day. This soup has a rich flavor, without being too heavy.


Ingredients

  1. 1 tbsp salted butter
  2. 1.5 tsp canola oil
  3. 1 cup chopped onions
  4. 1/4 cup chopped celery
  5. 1 cup chopped carrot
  6. 6 cloves garlic, finely chopped
  7. 5 cups cubed peeled yellow potatoes (1 inch)
  8. 6 cups no-salt-added chicken broth
  9. 1 cup shredded smoked Gouda cheese
  10. 1/2 cup milk (2%)
  11. Salt and freshly ground pepper to taste
  12. 1/2 tsp turmeric
  13. Toppings: Shredded smoked Gouda cheese, sliced green onion and smoked paprika

Instructions

  1. In a deep sauce pan, heat butter with olive oil in a Dutch oven over medium heat. Add celery, onions, carrots and garlic to the pot. Sauté until softened which will take about 5 minutes.

  2. To your pan, add potatoes and broth.

  3. Bring to a boil, then reduce heat and let simmer, uncovered for about 30 minutes. Stir occasionally.

  4. Mix the cup of smoked Gouda cheese, milk, pepper, salt and turmeric. Stir the mixture until it is thoroughly combined. Keep stirring for about 4 minutes, then remove from heat.

  5. Use an immersion blender to purée the mixture until smooth.

  6. Ladle into a bowl and serve with toppings.

Notes

If you don’t have an immersion blender, you can use a regular blender to purée soup in small batches, make sure that the blender is less than half full of soup when you’re blending it. Leave the lid open while blending, just cover it with a dish towel. This will allow the heat escape while also preventing hot soup from spraying out of the top of the blender. Pour the blended soup into a clean pot.
