Description
These lavender wafer cookies are a unique and fragrant treat that combines the floral and sweet taste of lavender with the buttery texture of a wafer cookie. They make a great addition to a tea party or as a special gift.

- 1 cup (2 sticks) unsalted butter, at room temperature
- 1/2 cup granulated sugar
- 2 large egg whites
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1/4 tsp baking powder
- 1/4 tsp salt
- 2 tsp dried lavender buds
- 1 tsp grated lemon zest
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a mixing bowl, beat the butter and sugar together until light and fluffy.
- Add the egg whites and vanilla extract, and mix until well combined.
- In a separate bowl, whisk together the flour, baking powder, salt, lavender buds and lemon zest. Slowly add this to the butter mixture, mixing until just combined.
- Roll out the dough between two sheets of parchment paper to a thickness of 1/8 inch.
- Using a cookie cutter, cut out the cookies and place them on the prepared baking sheet.
- Bake the cookies for 12-15 minutes, or until they are golden brown.
- Remove the cookies from the oven and let them cool on a cooling rack.

Notes
Note: You can adjust the amount of lavender buds and lemon zest to your taste. You can also add some edible food color to the dough to get a nice lavender color. Happy baking!
