Caramel Without Corn Syrup Recipe

Description

Making caramel with out corn syrup is the way to go. Although corn syrup is really useful for making candies, it’s not the only game in town. Learn some alternatives in this recipe and make delicious caramel at the same time!


Ingredients

  1. 85 ml of heavy cream, room temperature
  2. 1 vanilla pod
  3. 1 ¼ cups powdered sugar
  4. 6 tablespoons butter, room temperature

Kitchen tools you’ll need

  1. Small saucepan
  2. Heavy-bottomed pan
  3. Candy thermometer
  4. Silicone spatula
  5. Baking sheet
  6. Parchment paper
  7. Nonstick cooking spray
  8. Sharp knife
  9. 3x3-inch squares wax paper

Instructions

  1. Prepare all the ingredients before starting with anything and make sure they are within easy reach.
  2. Line the baking sheet with parchment paper and grease lightly with nonstick cooking spray.
  3. Pour the cream onto the small saucepan.
  4. Split the vanilla pod in half and scrape the paste out. Add it to the cream in the pan.
  5. Heat over low heat to infuse the cream with the vanilla.
  6. Remove the vanilla pod once the cream is well-heated.
  7. Melt the sugar in the heavy-bottomed pan over medium heat.
  8. Stir the sugar occasionally.
  9. Once the sugar has completely melted, bring it to 350 degrees Fahrenheit (or 177 degrees Celsius) until it turns toffee brown.
  10. Immediately remove from the heat and add in the heated vanilla-infused cream. At this stage, the mixture will bubble rapidly so need you to stir until well combined.
  11. Once well combined, bring the mixture to 250 degrees Fahrenheit (or 121 degrees Celsius) and stir only occasionally.
  12. Remove from the heat and add the butter. Mix until well combined. By now you should have a smooth and glossy mixture.
  13. Pour the mixture onto the lined baking sheet and rest at room temperature for at least 3 hours. 
  14. Grease the knife with cooking spray and cut the caramel into squares.

  15. Wrap each with wax paper.
