  • 1/2 cup granulated sugar, divided
  • 1 tsp vanilla extract
  • 2 large egg yolks
  • 2 tbsp unsalted butter
  • 1 cup heavy cream
  • A pinch of salt
  • Chocolate shavings or cocoa powder for garnish (optional)


  1. Cocoa Mixture: In a medium bowl, whisk together the cocoa powder and boiling water until smooth. Set aside to cool slightly.
  2. Egg Yolk Mixture: In a separate bowl, whisk together the egg yolks, 1/4 cup of sugar, and salt. Set aside.
  3. Heat Cocoa: In a saucepan over medium heat, combine the cocoa mixture and butter. Stir until the butter is melted and the mixture is heated through.
  4. Temper Eggs: Gradually whisk about half of the hot cocoa mixture into the egg yolk mixture to temper the yolks. Then, pour the tempered yolk mixture back into the saucepan with the remaining cocoa mixture.
  5. Cook: Cook over medium heat, stirring constantly, until the mixture thickens slightly (about 1-2 minutes). Remove from heat and stir in the vanilla extract. Transfer to a large bowl and let it cool to room temperature.
  6. Whip Cream: In a separate bowl, whip the heavy cream with the remaining 1/4 cup of sugar until stiff peaks form.
  7. Fold: Gently fold the whipped cream into the cooled cocoa mixture until no white streaks remain.
  8. Chill: Pour the mousse into individual serving dishes and refrigerate for at least 2 hours, or until set.
  9. Serve: Before serving, garnish with chocolate shavings or a dusting of cocoa powder if desired.
