For the Mousse:

  • 200g dark chocolate (at least 70% cocoa)
  • 3 large eggs, separated
  • 50g granulated sugar
  • 1 tsp vanilla extract
  • 200ml heavy cream
  • A pinch of salt

For the Cups:

  • 150g dark chocolate (for melting)
  • 6 small balloons

For Garnish (optional):

  • Whipped cream
  • Fresh berries
  • Mint leaves
  • Chocolate shavings

Instructions

  1. Prepare the Cups: Melt the 150g of dark chocolate over a double boiler or in the microwave in 20-second increments. Inflate the balloons to the size of the desired cups. Dip the balloons into the melted chocolate, ensuring they are coated evenly to form the shape of the cup. Place them on a tray lined with parchment paper, with the chocolate side facing down. Refrigerate until set.
  2. Mousse Preparation: Melt the 200g of dark chocolate in a heatproof bowl over simmering water. Once melted, remove from heat and let it cool slightly. In a separate bowl, whisk the egg yolks, sugar, and vanilla extract until pale and slightly thickened. Gradually fold the melted chocolate into the egg yolk mixture.
  3. Whip Cream: In another bowl, whip the heavy cream until soft peaks form.
  4. Egg Whites: In a clean, dry bowl, beat the egg whites with a pinch of salt until stiff peaks form.
  5. Combine: Gently fold the whipped cream into the chocolate mixture until just combined. Then, fold in the beaten egg whites until no white streaks remain.
  6. Fill the Cups: Once the chocolate cups are set, gently deflate and peel away the balloons. Fill each chocolate cup with the mousse mixture. Refrigerate for at least 2 hours, or until set.
  7. Serve: Before serving, garnish with whipped cream, fresh berries, mint leaves, and chocolate shavings if desired.

Notes

  • Ensure all your utensils are clean and dry when beating the egg whites to achieve stiff peaks.
  • Be gentle when removing the balloons from the chocolate cups to prevent them from breaking.
  • The mousse cups are best served chilled and can be stored in the refrigerator for up to 2 days.
