Broccoli Soup Without Milk or Cream

This soup packs a punch nutrient-wise. The distinctive broccoli florets carry powerful nutrients like iron, potassium, fiber, calcium, magnesium, vitamin C and vitamin K.


  1. 2 large broccoli crowns
  2. 1 onion chopped
  3. 2 garlic cloves, minced
  4. 3 cups low-sodium vegetable broth
  5. 1 cups unsweetened almond milk (or coconut milk)
  6. Dill or croutons, to garnish


  1. Add the vegetable broth, almond milk (or coconut milk), broccoli.
  2. Bring all the ingredients to a simmer and keep simmering until the broccoli is soft
  3. When the broccoli is soft, use an immersion blender until the soup is smooth.
  4. Season with salt and pepper and enjoy!


If you don’t have an immersion blender, you can use a regular blender. Just transfer the soup to the regular blender in batches, blend until smooth and put the smooth soup into a second pot. Keep doing this until the entire soup is blended.
