Description
This soup packs a punch nutrient-wise. The distinctive broccoli florets carry powerful nutrients like iron, potassium, fiber, calcium, magnesium, vitamin C and vitamin K.
Ingredients

- 2 large broccoli crowns
- 1 onion chopped
- 2 garlic cloves, minced
- 3 cups low-sodium vegetable broth
- 1 cups unsweetened almond milk (or coconut milk)
- Dill or croutons, to garnish
Instructions
- Sauté the onion and garlic in a large pot until softened.
- Add the vegetable broth, almond milk (or coconut milk), broccoli.
- Bring all the ingredients to a simmer and keep simmering until the broccoli is soft
- When the broccoli is soft, use an immersion blender until the soup is smooth.
- Season with salt and pepper and enjoy!
Notes
If you don’t have an immersion blender, you can use a regular blender. Just transfer the soup to the regular blender in batches, blend until smooth and put the smooth soup into a second pot. Keep doing this until the entire soup is blended.
