Bailey’s and Chocolate Mousse Recipe

  • 200g dark chocolate (at least 70% cocoa)
  • 3 large eggs, separated
  • 50g granulated sugar
  • 1 tsp vanilla extract
  • 200ml heavy cream
  • 100ml Baileys Irish Cream
  • A pinch of salt
  • Grated chocolate or cocoa powder for garnish (optional)
  • Whipped cream for topping (optional)


  1. Chocolate Preparation: In a heatproof bowl, melt the dark chocolate over a pot of simmering water. Ensure the bowl doesn’t touch the water. Once melted, remove from heat and let it cool slightly.
  2. Egg Yolks: In a separate bowl, whisk the egg yolks, sugar, and vanilla extract until the mixture becomes pale and slightly thickened.
  3. Baileys Addition: Stir the Baileys Irish Cream into the melted chocolate until well combined.
  4. Combine: Gradually and gently fold the Baileys-chocolate mixture into the egg yolk mixture.
  5. Whip Cream: In another bowl, whip the heavy cream until soft peaks form.
  6. Egg Whites: In a clean, dry bowl, beat the egg whites with a pinch of salt until stiff peaks form.
  7. Fold: Gently fold the whipped cream into the chocolate mixture until just combined. Then, fold in the beaten egg whites until no white streaks remain.
  8. Set: Pour the mousse into individual serving dishes or glasses. Refrigerate for at least 4 hours, or until set.
  9. Serve: Before serving, garnish with whipped cream, grated chocolate or cocoa powder if desired.


  • Ensure all your utensils are clean and dry when beating the egg whites to achieve stiff peaks.
  • The alcohol content in the Baileys remains, so this dessert is suitable for adults only.
  • For a non-alcoholic version, you can use a Baileys-flavored coffee creamer instead of the actual liqueur.
